A Faux-Fancy Mother’s Day Dessert::

I’ve been trying to think of an impressive recipe to post for Mother’s Day, but I couldn’t think of anything special, but also simple. I found this sweet little dessert a few weeks ago and I think it’s perfect. It’s super easy to make, it’s pretty and you can pretend that it’s really healthy because it uses fruit. All you need is puff pastry, whipped cream (preferably homemade, but we won’t judge you if you use store bought) and whatever fruit your mother, grandmother, mother-in-law, and aunts like. Enjoy!

Mother’s Week::

My girls can’t stop laughing at how major Mother’s Day is for me. This year I’m celebrating 26 years! It has been an amazing ride filled with laughter, stress, tears, joy….and every other emotion possible. And I think I’ve finally found a sound cruising altitude:) I love this space. My role has changed from coach to adviser and the reward is knowing that they really were listening!

If you are a new mom, pregnant mom, grand mom or a mom to every kid you know, these flowers are for all of us! Celebrate this week and know that this is the greatest name anyone can give you.

It’s May 1st, ladies! I can see Summer on the horizon which means it’s time to get in shape! I have a birthday cruise planned (in July), so I’m on a mission to look good in whatever bikini(s) I end up buying. And coincidentally, the Tone It Up annual Bikini Series started last week and the first workout of the series was posted yesterday. How much more confirmation do we need? It’s time to get serious! We’ll be talking about all things health for a few days around here, but I figured we’d start with a workout. Jump in with this routine to kickstart your program. I’m about to do it right now!

Let Them Eat Kale::

I’m a huge fan of greens. In fact, I can’t think of a type of green that I don’t like. So it goes without saying that I don’t have a problem when it comes to getting greens into my diet. But to avoid boredom, I’m always looking for new ways to incorporate them. For example, I put spinach or kale into every single smoothie (or juice) I drink. I frequent the Whole Foods salad bar because they always have some new kale salad to try. (Right now, I’m loving the raw kale salad with garlic dressing. So delicious!) And when all else fails, I make kale chips!

These chips are the perfect gateway into kale love and they’re so incredibly easy to make. You can find tons of different variations of this recipe online, but this is my go-to.

Baked Kale Chips

1 Bunch of Kale (I used curly kale.)

Olive Oil

Sea Salt

Preheat your oven to 400° and line a baking sheet with parchment paper (optional, but ensures easy cleanup). Wash and dry your kale extremely well. I dried my kale in a salad spinner and then dried it again with paper towels. Separate kale leaves from stems and chop (or tear) into pieces. Transfer kale to a large bowl and drizzle with olive oil. Toss with your hands to make sure each piece is coated. Spread kale in a single layer on the baking sheet and pop it into the oven. Bake for 12-15 minutes (remove halfway through to stir). Sprinkle with sea salt immediately after removing the baking sheet from the oven.

That’s it! Simple, delicious and possibly the healthiest “chip” ever. I’d suggest making these for the kale-haters in your life. And if they refuse, sprinkle a little parmesan cheese on them. I’m also thinking about putting a little lemon juice or zest on my next batch. Yum!
